Fresh Vegetable Medley
- 1 lb. broccoli, cut into thin stalks
- 1 cauliflower, cut into florets
- 1 large zucchini, sliced 1/4-inch
- 1 patty pan or scallop squash, sliced 1/4-inch
- 6 to 8 mushrooms, washed and halved
- 1 sweet red pepper, seeded and cut into strips
- 1 green bell pepper, seeded and cut into strips
- 1/4 c. butter, melted
- 1/2 tsp. garlic salt
- 1/4 tsp. pepper
- Arrange vegetables on largest round glass platter that will fit microwave.
- Place broccoli around edge; arrange cauliflower next to broccoli.
- Alternate squash, mushrooms and peppers toward center of dish.
- Combine melted butter, garlic salt and pepper and drizzle over vegetables.
- Cover with waxed paper and microwave 10 to 15 minutes.
- Vegetables should remain crisp, not mushy.
