Pineapple-Glazed Spareribs
- 3/4 c. soy sauce
- 1/4 c. dry sherry
- 1 Tbsp. minced peeled ginger root or 1 tsp. ground ginger
- 2 green onions, diced
- 1 garlic clove, crushed
- 4 lb. pork spareribs, cut into rib portions
- 2 (14 to 20 oz.) cans pineapple chunks in juice
- 1/2 c. packed brown sugar
- In large open roasting pan mix first five ingredients.
- Place spareribs in soy sauce mixture, turning each portion to coat well. Arrange spareribs, meat side down, in roasting pan.
- Bake in 325u0b0 oven one hour.
- With pastry brush, baste ribs occasionally with soy sauce mixture in pan.
- Turn ribs meat side up and bake 20 minutes.
- Meanwhile, into 1 cup measure, drain 1/4 cup pineapple chunks; stir in brown sugar.
- Brush spareribs with brown sugar mixture.
- Bake 10 minutes longer or until spareribs are fork-tender.
- Spoon drained pineapple chunks over spareribs.
- Bake 5 minutes or just until pineapple is heated through.
- Arrange spareribs on warm large platter with pineapple.
