Banana Apple Strudel Muffins
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon coriander seed, ground up
- 1/4 teaspoon allspice
- 1/4 teaspoon cinnamon
- 1 1/2 cups mashed bananas
- 2 1/2 cups apples, chopped
- 3 tablespoons canola oil
- 1 cup water
- 1/3 cup brown sugar, packed
- 1 tablespoon flour
- 1/4 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1 tablespoon vegan margarine
- Preheat oven at 350u0b0F.
- Mix flour, baking powder and soda, salt and spices.
- In a separate bowl mix sugar, banana and oil.
- Add apples to flour mixture and ensure they are well coated.
- Stir in the sugar mix and then the water, mix well.
- Spoon into well greased muffin pan.
- *If adding the topping: mix sugar, flour and spices then cut in the margarine until crumbly - spoon a small amount on top of each muffin.
- Bake for 25 minutes.
