Sausage Stew
- 1 lb. pkg. Hillshire Farm Polska kielbasa or any variety Hillshire Farm smoked sausage
- 1/4 c. olive oil
- 1 tsp. fennel
- 2 garlic cloves, finely chopped
- 1 Tbsp. oregano
- 1 c. celery, chopped
- 1 medium white onion, quartered
- 4 large carrots, peeled and chopped
- 1 lb. mushrooms, cleaned and cut in half
- 2 (12 oz.) cans diced tomatoes
- 12 small whole new potatoes
- 1 (8 oz.) can tomato sauce
- salt and pepper to taste
- Heat the oil in a heavy pan and add the onion, garlic, celery, fennel, salt and pepper.
- Saute until soft.
- Add all other ingredients except for the sausage and cook for 20 minutes over low heat.
- Add sausage; simmer for another 15 minutes or until heated through.
- Serves 6.
