Old Fashioned Chocolate Fudge
- 2 c. sugar
- 1/3 c. cocoa
- 1/4 tsp. salt
- 1 tsp. vanilla
- 2/3 c. milk
- 2 Tbsp. corn syrup
- 2 Tbsp. butter
- Grease a loaf pan. (Use butter or oleo.) Combine sugar, milk, chocolate,torn
- syrup and salt in a 2-quart saucepan. Cook
- over medium heat, stirring constantly until chocolate is meltedtnd sugar is dissolved.
- Cook, stirring occasionally, to 234u0b0 on candy thermometer (or until small amount of mixture dropped
- into very cold water forms a soft ball which flattens when removed from water).
- Remove from heat; add butter.
- Cool mixture
- to
- 120u0b0 without
- stirring,tbottom
- of pan will be lukewarm).
- Add vanilla
- and beat vigorously and continuously for 5
- to
- 10 minutes with wooden spoon, until candy is thick and
- no longer glossy.
- Spread evenly in a buttered pan.
- Cool until firm.
- Cut into squares.
