Quick Hamburger Supper
- 1 lb. ground beef
- 1 small onion, finely chopped
- 2 slices white bread
- 2 c. water
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. chopped parsley
- 1/8 tsp. ground nutmeg
- 2 Tbsp. oil
- 1 (12 oz.) jar mushroom gravy
- 1/4 c. Burgundy wine or water
- 1 1/2 c. Minute rice
- Combine beef, onion, bread, 1/2 cup of the water, 1/2 teaspoon of the salt, pepper and nutmeg in a large bowl; mix well.
- Shape into 4 loaves.
- Cook loaves in hot oil in a large skillet until browned.
- Stir in gravy and wine.
- Reduce heat, cover and simmer 15 minutes or until cooked through.
- Meanwhile, bring remaining water and salt to a boil.
- Stir in rice and parsley; cover. Remove from heat.
- Let stand 5 minutes.
- Fluff with a fork.
- Serve rice with loaves.
