Spiced Banana Coffee Ring
- 1/2 c. butter or margarine, melted
- 2/3 c. firmly packed dark brown sugar
- 2/3 c. sliced almonds
- 2 large ripe bananas, mashed
- 1 large egg, lightly beaten
- 1/4 c. sugar
- 2 c. baking mix
- 1/3 c. milk
- 1 3/4 tsp. cinnamon
- 1/2 tsp. nutmeg
- Preheat oven to 400u0b0.
- Grease a 9-cup Bundt pan.
- Pour 1/4 cup of melted butter into prepared pan.
- Sprinkle 1/3 cup of brown sugar and 1/3 cup of nuts evenly over butter.
- Mix together mashed bananas, egg and sugar.
- Stir in baking mix and milk.
- Mix together brown sugar, nuts, cinnamon and nutmeg.
- Spoon half of banana mixture into prepared pan.
- Top with brown sugar-spice mixture. Drizzle with remaining melted butter.
- Spoon over remaining banana mixture.
- Smooth top.
- Bake cake until a toothpick inserted near center comes out clean, about 25 minutes.
- Immediately invert pan onto a serving plate for 3 to 4 minutes, allowing syrup to drizzle over cake.
- Remove pan.
- Cool.
