Thumbprints
- 1/2 c. low-fat diet margarine
- 1 tsp. granulated sugar substitute
- 1 tsp. orange peel, grated
- 1 3/4 tsp. lemon peel, grated
- 3/4 tsp. vanilla extract
- 1 Tbsp. lemon juice
- 1 Tbsp. orange juice
- 1 c. flour
- 1 tsp. salt
- 1 egg, separated
- 1/2 c. nuts, chopped
- diet jelly
- Mix together all ingredients except egg white, nuts and jelly. Roll into small balls.
- Beat egg white until stiff peaks form. Spread the nuts on waxed paper.
- Roll each ball in egg white, then in nuts.
- Place on cookie sheet and make a thumbprint in each one. Bake at 350u0b0 for 12 minutes.
- Cool.
- When completely cool, fill thumbprint with diet jelly.
- Diet jelly (teaspoon = 16 calories). Yield:
- 4 dozen cookies.
- Carbohydrate 2.5 g, protein .6 g, fat l.9 g, calories 29.
- One cookie = 1/4 bread exchange, 1/4 fat exchange.
