Old Fashioned Oatmeal Cookies
- 1 c. raisins
- 1 c. water
- 1/2 c. raisin juice
- 2 eggs, beaten
- 3/4 c. margarine
- 1 tsp. vanilla
- 1 1/2 c. white sugar
- 2 c. old fashioned oats
- 3/4 c. nuts
- 2 1/2 c. flour
- 1/2 tsp. baking powder
- 1 tsp. salt
- 1 tsp. soda
- 1 tsp. cinnamon
- 1 tsp. cloves
- Simmer raisins for 20 minutes.
- Remove raisins from juice and let cool.
- You will need 1/2 cup of juice from raisins.
- Cream together margarine, eggs, sugar and vanilla, then add raisin juice.
- Sift flour, baking powder, salt, soda and spices together. Slowly mix dry ingredients into creamed mixture. When thoroughly mixed add old fashioned oats, nuts and raisins last.
- Bake at 400u0b0 on top rack for 10 minutes.
