Strawberry Short Cake... With A Couple Of Twists.
- 1 (9 inch) vanilla sponge cakes, cut into 9 equal squares
- 2 lbs fresh strawberries, cut in quarters
- 4 tablespoons sugar
- 1/2 cup lemon curd (or make your own)
- cracked black pepper
- 1 cup heavy cream, whipped
- Cut the cake squares in half. So that you are able to build sort of a sandwich.
- In a large bowl add strawberries and sugar. Stir.
- Let sit 5 minutes. Then season with cracked black pepper. ( i know this sounds odd -- but it's delicious).
- To assemble the cake:
- One layer of cake, topped with a spoon full of lemon curd.
- Top that with a generous helping of the strawberry mixture.
- Topped with whipped cream.
- Topped with second layer of cake.
- Topped with more strawberry and more cream.
- Enjoy.
