Meatless Spaghetti Sauce
- 1/4 c. olive oil
- 1 medium onion, finely chopped
- 1 small dried hot red chili, crushed
- 1 or 2 cloves garlic, minced or pressed
- 1 (14 1/2 oz.) can Italian-style tomatoes
- 1 Tbsp. capers
- 1/4 tsp. oregano leaves
- 1 (16 oz.) can tomato sauce
- 1/4 c. slivered ripe olives
- little garlic powder for more flavor
- Heat olive oil in a wide frying pan over medium heat.
- Add onion and chili and cook until onion is soft.
- Mix in garlic, tomatoes with their liquid (break up with spoon), tomato sauce, olives, capers and oregano.
- Adjust heat so that mixture boils gently.
- Cook uncovered, stirring occasionally, until sauce is slightly thickened (15 to 20 minutes).
- Use over spaghetti or any pasta.
