Pita Kalamaki
- 900 g pork
- 6 wheat, burrito pies
- 3 cutted tomatoes
- 3 cutted onions
- 1 teacup white wine and lemon juice
- 2 tablespoons oregano
- 1/2 spoon thyme
- 1/2 spoon rosemary
- salt and pepper
- 600 g yogurt
- 2 small grated cucumbers
- 3 grated garlic cloves
- 2 tablespoons dill
- 7 tablespoons olive oil
- 4 choped potatoes (like french fries)
- Marinate the meat from the night before.
- Put in a glass 1/2 tablespoon oilve oil, the white wine with the lemon juice, 1 tablespoon oregano, the thime and the rosemary.
- Cut the pork (as shown in the pictures), then mix it with the mixture and then leave them there all night.
- To prepare the tzatziki sauce, put the cucumber in a sieve, add salt and leave for 1 hour.
- Periodically press with our palm.
- Put the yogurt in a large bowl and add the cucumber, garlic, dill and olive oil.
- Mix well to combine all ingredients.
- Once the mixture is ready, refrigerate for at least 1 hour to tie all the ingredients together.
- Preheat oven to 200 degrees and lay on a large baking sheet pan.
- Put the potatoes into a large bowl and add the olive oil and oregano, salt according to your taste and mix well with your hands.
- Spread the potatoes on a baking tray and bake until browned nicely.
- Change the operation of our oven to grill mode and lay with parchment paper a large pan.
- Place the choped pork pieces next to each other and bake for 30-40 ' turning them frequently.
- At the same time, the position directly below bake the burrito pies and pour 1/2 tablespoon olive oil on each.
- Put the meat in the pies with tomato and onion.
- On each pie, add a few potatoes and 2 tablespoons of tzatziki.
- Enfold the Pies and start eating (like a burrito).
- Enjoy the remaining fries as a side wiht your Pita Kalamaki!
