Chicken In Beer
- 1/2 c. flour
- 1/4 tsp. ground pepper
- 1 onion, thinly sliced
- 1 1/2 c. beer, room temperature
- 2 Tbsp. chopped parsley
- 1 tsp. salt
- 1 (3 to 3 1/2 lb.) fryer, cut up
- 1/2 c. whipping cream
- 3 to 4 Tbsp. butter
- Combine flour, salt and
- pepper
- in shallow dish.
- Roll chicken pieces in flour,
- coating
- well.
- Melt butter in large skillet over medium-high heat.
- Add chicken and cook frequently, turning until chicken is
- golden,
- about 12 to 15 minutes. Add beer and onions.
- Cover;
- reduce
- heat and simmer, turning occasionally,
- until chicken
- is
- tender,
- about
- 40
- minutes. Blend in whipping cream
- and
- parsley.
- Increase heat to medium-high.
- Continue to cook until
- heated through, about 2 to 3 minutes.
