Lumpia
- 1 lb. lean ground beef
- 1 lb. pork sausage
- 2 c. finely chopped onions
- 1 c. finely chopped celery
- 1 small bag (16 oz.) shredded carrots
- 1 bag (16 oz.) cole slaw
- 1 bag (16 oz.) broccoli slaw
- 3 Tbsp. chopped garlic
- 2 Tbsp. chopped ginger
- 2 Tbsp. coarse black pepper
- 2/3 c. soy sauce
- 1/4 c. oil
- lumpia wrappers
- 2 Tbsp. cornstarch mixed with 1/2 c. warm water
- Brown the ground beef and drain.
- Set aside.
- Brown pork sausage and drain.
- Set aside.
- In a large fry pan, add oil and heat.
- Add garlic, ginger, and pepper.
- Simmer for one minute. Add onion and celery and simmer for two more minutes, stirring occasionally.
- Add carrots, cook and stir for two minutes.
- Add broccoli slaw, stir and simmer two more minutes.
- Add cole slaw, stir and simmer one more minute.
- Add both meats and stir well. Simmer one more minute.
- Add soy sauce and stir.
- Heat thoroughly (about 2-3 minutes). Pour into a colander and drain well. Refrigerate mixture overnight to chill.
