Lemon Garlic Shrimp Stir-Fry

  1. Heat the olive oil in a wok or large skillet.
  2. Add the bell pepper and zucchini.
  3. Stir-fry for 3 minutes.
  4. Add the shrimp, garlic and scallions.
  5. Stir-fry over high heat for a few more minutes.
  6. Add the snow peas.
  7. Stir-fry until the shrimp begin to curl.
  8. Add the lemon juice and zest.
  9. Stir-fry until the shrimp turn pink.
  10. Remove to a serving platter using a slotted spoon. Season with salt and pepper.
  11. Sprinkle with parsley and chives. Serve with orzo, rice or noodles.
