Lemon Garlic Shrimp Stir-Fry
- 2 Tbsp. olive oil
- 1 red or yellow bell pepper, cut into julienne strips
- 1 medium zucchini, cut into 1/2 inch half moon slices
- 1 lb. uncooked peeled shrimp
- 4 garlic cloves, minced
- 1/2 c. diagonally sliced scallions
- 6 ounces snow peas
- 1/4 c. lemon juice
- zest of 1 lemon
- salt and pepper to taste
- 1/2 c. fresh parsley, coarsely chopped
- 1/4 c. chopped chives
- Heat the olive oil in a wok or large skillet.
- Add the bell pepper and zucchini.
- Stir-fry for 3 minutes.
- Add the shrimp, garlic and scallions.
- Stir-fry over high heat for a few more minutes.
- Add the snow peas.
- Stir-fry until the shrimp begin to curl.
- Add the lemon juice and zest.
- Stir-fry until the shrimp turn pink.
- Remove to a serving platter using a slotted spoon. Season with salt and pepper.
- Sprinkle with parsley and chives. Serve with orzo, rice or noodles.
