White Chocolate Chip Cookies
- 2 1/4 c. flour, sifted
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. unsalted butter, softened
- 3/4 c. firmly packed brown sugar
- 1 1/4 c. golden raisins
- 3/4 c. granulated sugar
- 3 large eggs
- 1 tsp. vanilla extract
- 12 oz. coarsely chopped white chocolate
- 3/4 c. coarsely chopped, salted Macadamia nuts
- Preheat oven to 350u0b0.
- Combine flour, baking soda and salt in medium bowl.
- Beat butter and sugars in large mixer bowl at medium speed until light and fluffy.
- Add eggs, one at a time, beating well after each.
- Beat in vanilla.
- Beat in dry ingredients.
- Stir in white chocolate, nuts and raisins.
- Drop by rounded teaspoons onto cookie sheets.
- Bake 8 to 10 minutes until pale golden.
- Cool on wire rack.
- Makes 6 dozen.
