Souse
- 5 lb. pigs feet, cut into 1-inch pieces
- 2 lb. pigs ears, cut into 1/2-inch pieces
- 2 lb. pigs tails, cut into 1-inch pieces (optional)
- 1 small jar diced pimientos
- 3 c. vinegar or more to taste
- 3 lemons, quartered and seeded
- 1 c. sweet pickle or more to taste
- red pepper, cut up (amount to taste)
- salt and pepper to taste
- Tabasco sauce to taste
- Cook the feet with water (to cover), salt, pepper and 1 cup vinegar for approximately 30 minutes.
- Then add all other ingredients and cook until all meats are cooked to the degree of doneness desired.
- Serves a crowd and is eaten with a fork as the feet will mostly cook off the bones.
- This is extremely good served with Hoppin' Jack (black-eyed peas, rice and bacon ends), greens, candied yams, salad and corn bread.
