Beef Couscous Crock Pot

  1. Brown beef in a heavy skillet and pour off excess fat.
  2. Add broth, pepper, olives, onion, garlic, cumin and thyme.
  3. Top with beef, cover and cook on low 4-5 hours until vegetables are tender.
  4. Add water to a small sauce pan and bring to a boil.
  5. Stir in couscous, remove from heat and cover.
  6. After 5 minutes, remove cover and stir with a fork.
  7. Spoon couscous on to individual plates and top with the beef mixture.
