Giant Ginger Cookies

  1. Stir together flour, soda and spices.
  2. Set aside. In large bowl, beat shortening until softened.
  3. Gradually add 2 cups sugar; beat until fluffy.
  4. Add eggs and molasses; beat well.
  5. Add half of flour; beat until combined.
  6. Stir in remaining flour with a wooden spoon.
  7. Using a 1/4-cup ice cream scoop, shape dough into 2-inch balls.
  8. Roll in sugar.
  9. Place on ungreased cookie sheet about 2 1/2-inches apart.
  10. Bake at 350u0b0 for 12 minutes or until light brown and puffed.
  11. Let stand 2 minutes before transferring to a wire rack.
  12. Cool.
  13. Makes about 25 cookies.
