Giant Ginger Cookies
- 4 1/2 c. flour
- 2 tsp. baking soda
- 4 tsp. ginger
- 1 1/2 tsp. cinnamon
- 1 tsp. cloves
- 1 1/2 c. shortening
- 2 c. sugar
- 2 eggs
- 1/2 c. molasses
- 3/4 c. coarse or granulated sugar
- Stir together flour, soda and spices.
- Set aside. In large bowl, beat shortening until softened.
- Gradually add 2 cups sugar; beat until fluffy.
- Add eggs and molasses; beat well.
- Add half of flour; beat until combined.
- Stir in remaining flour with a wooden spoon.
- Using a 1/4-cup ice cream scoop, shape dough into 2-inch balls.
- Roll in sugar.
- Place on ungreased cookie sheet about 2 1/2-inches apart.
- Bake at 350u0b0 for 12 minutes or until light brown and puffed.
- Let stand 2 minutes before transferring to a wire rack.
- Cool.
- Makes about 25 cookies.
