Cuban Chickpeas And Chorizo (Portuguese Sausage)
- 1/2 c. olive oil
- 1 large onion, chopped
- 2 to 3 garlic cloves
- 1 small green pepper, chopped
- 1 can kitchen-ready tomatoes
- 1 can chicken broth
- 3 cans chickpeas, drained
- 3 to 4 medium size chorizos
- 1/4 lb. baked ham, chopped
- 2 Tbsp. finely chopped parsley
- 2 tsp. oregano
- 2 tsp. basil
- 2 tsp. cumin
- 1 Tbsp. Worcestershire sauce
- In large skillet, over low heat, heat the oil.
- Then add the onion, pepper and garlic, stirring until tender, 6 to 8 minutes. Add the tomatoes, chicken broth, oregano, basil, cumin and Worcestershire sauce.
- Cook until heated through.
- Add the chickpeas, chorizo and ham.
- Reduce heat to low and cook 1 hour.
