Miss Frances Stephens' Pineapple Cake For A Crowd
- 1 can crushed pineapple
- 1 c. flaked coconut
- 2 c. sifted flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. shortening
- 3/4 c. sugar
- 2 eggs
- 1 (6 oz.) pkg. semi-sweet chocolate morsels
- Mix 3/4 cup undrained pineapple with coconut and set aside. Mix flour, baking powder, baking soda and salt together.
- Work shortening until soft, then add sugar until mixture is creamy. Add eggs, one at a time and beat after each one.
- Mix flour mixture and remaining undrained pineapple into batter alternately. Pour into baking pan.
- Sprinkle batter with pineapple and coconut mixture and chocolate morsels.
- Bake 25 minutes at 325u0b0 in greased pan.
