Cheesy Chicken Hash Brown Casserole
- 2 (10 1/2 ounce) cans cream of chicken soup
- 1/2 cup sour cream
- 1 cup chicken broth
- 3/4 teaspoon pepper
- 1 1/2 cups shredded cheese, Mexican blend, divided
- 2 (20 ounce) packages refrigerated shredded hash browns
- 1 lb cooked shredded chicken
- 1 cup crushed Ritz cracker
- 2 tablespoons melted butter
- Preheat oven to 400u0b0F. In a large bowl mix together soups, sour cream, chicken broth, & pepper, until we'll combine. Stir in 1 cup of cheese, hash browns, and chicken. Place in the bottom of a lightly greased 9x13'' pan. Top with remaining 1/2 cup of cheese.
- In a small mixing bowl mix together crackers and butter. Sprinkle over hash brown mixture.
- Bake for 1 hour or until top is golden brown.
