Granola

  1. Put oats, wheat germ, sugar, coconut, almonds and cinnamon in a large nonmetal bowl.
  2. Stir until well mixed.
  3. Set aside.
  4. Slice banana into 1 cup measuring cup and mash until smooth.
  5. Add oil and vanilla.
  6. Stir until well mixed.
  7. Pour over oat mixture and stir.
  8. Place in microwave.
  9. Set on High for 3 minutes.
  10. Stir and cook again for 3 minutes.
  11. Stir and cook again for 2 more minutes. Stir in dried fruit/nuts.
  12. Cool for 1 hour.
  13. Cover in airtight container.
  14. Good for up to 2 weeks.
