Microwave Lasagna Rolls(Serves 3)
- 4 uncooked lasagna noodles
- 1 (10 oz.) frozen chopped spinach, thawed
- 1 egg
- 1 c. cottage cheese
- 1 c. shredded Mozzarella
- 1/2 tsp. oregano
- 1/2 tsp. basil
- dash of garlic powder
- 1 (8 oz.) can tomato juice
- Cook noodles; drain.
- Drain spinach.
- Combine egg, spinach, cottage cheese, half of the Mozzarella cheese, oregano, basil and garlic.
- Spread the spinach-cheese mixture evenly on the four lasagna noodles.
- Loosely roll each noodle, jelly roll style, starting with short edge.
- Place seam-side down in microwave-safe dish.
- You can refrigerate at this point until ready to serve. Pour tomato sauce over rolls.
- Cook, covered, for 10 to 12 minutes on High in microwave.
- Sprinkle with remaining Mozzarella.
- Cover and let stand 5 minutes.
