Creamy Rice, Chicken & Spinach Dinner

  1. Heat dressing in a large, deep skillet on medium-high heat.
  2. Add chicken; cook for 3 minutes.
  3. Add broth; bring to a boil.
  4. Stir in rice; return to a boil, cover and reduce heat to medium; simmer 5 minutes.
  5. Stir neufchatel cheese into rice mixture until melted.
  6. Add spinach; cover. Cook until spinach is wilted.
  7. Stir rice mixture gently to mix in spinach. Cover.
  8. Remove from heat; let stand 5 minutes.
  9. Stir in tomatoes and sprinkle with parmesan cheese.
