Cheesy Spicy Spinach
- 3 (10 oz.) boxes frozen, chopped spinach
- 1/2 c. spinach liquid, reserved from cooking spinach
- 1 Tbsp. margarine
- 1 onion, chopped
- 3 Tbsp. flour
- 1 c. skim milk
- 1 (6 oz.) roll hot pepper cheese, cubed
- 1 Tbsp. Worcestershire sauce
- 1/2 tsp. garlic powder
- Cook spinach according to directions on package; drain well, reserving 1/2 cup spinach liquid.
- Set aside.
- In pan coated with nonstick cooking spray, melt margarine and saute onion until tender.
- Add flour; stir.
- Gradually add milk and spinach liquid to make sauce.
- Cook until mixture thickens.
- Add cheese and seasonings; cook until cheese is melted.
- Add spinach to pan, combining well.
- Yields 10 servings.
