Cheesy Spicy Spinach

  1. Cook spinach according to directions on package; drain well, reserving 1/2 cup spinach liquid.
  2. Set aside.
  3. In pan coated with nonstick cooking spray, melt margarine and saute onion until tender.
  4. Add flour; stir.
  5. Gradually add milk and spinach liquid to make sauce.
  6. Cook until mixture thickens.
  7. Add cheese and seasonings; cook until cheese is melted.
  8. Add spinach to pan, combining well.
  9. Yields 10 servings.
  10. A favorite of spinach lovers.
