Artichoke Chicken
- 1 (9 oz.) pkg. frozen artichoke hearts, thawed
- 4 chicken breasts (boneless, skinless)
- 4 Tbsp. sweet Vermouth
- 1 (16 oz.) can chopped tomatoes
- 1 c. sharp Cheddar cheese, grated
- 8 slices bacon, cooked and drained
- garlic (fresh or powder)
- black pepper
- Preheat oven to 350u0b0.
- Place the artichoke hearts in the bottom of a baking dish.
- Place chicken breasts on top of artichokes.
- Season lightly with garlic and pepper. Lay bacon slices on top of chicken and spoon Vermouth over all.
- Bake for 40 minutes, draining excess liquid.
- Combine the tomatoes and cheese and spoon over the chicken.
- Add more garlic, pepper and Vermouth if desired.
- Bake for 20 minutes. Makes 4 servings. Serve over rice with a green salad.
