Chicken Roll-Ups
- 3 whole chicken breasts, split, skinned and boned
- 1 (4 1/2 oz.) pkg. Danish cooked ham, cut into 2-inch strips
- 1 c. (4 oz.) shredded Swiss cheese
- 1/3 c. dry Italian-style bread crumbs
- 2 Tbsp. grated Parmesan cheese
- 1 Tbsp. dry parsley flakes
- 1/4 c. butter or margarine, melted
- 3 green onions, chopped
- 1 c. sliced mushrooms
- 1/4 c. butter or margarine
- 3 Tbsp. flour
- 1 c. milk
- Place each chicken breast on a sheet of waxed paper; flatten using a meat mallet on rolling pin.
- Place 3 to 4 strips of ham across each chicken breast.
- Sprinkle Swiss cheese evenly over each chicken breast.
- Fold long sides of chicken towards the center; fold in sides of chicken to center, and secure with wooden picks.
