Hearty Winter Stew
- 2 lb. beef cubes
- 2 small onions
- 1 can (28 oz.) whole tomatoes
- 1 can (16 oz.) tomato sauce
- 1 box (10 oz.) frozen corn
- 1 box (10 oz.) frozen peas
- 1 box (10 oz.) frozen green beans
- 1 box (10 oz.) frozen lima beans
- 1 bag (20 oz.) frozen whole baby carrots
- 5 or 6 large potatoes
- salt and pepper to taste
- Cut beef cubes into bite-sized pieces.
- Peel potatoes and dice. Cut up onions.
- Cut up whole tomatoes (save juice).
- Coat bottom of soup pot with oil.
- Place beef cubes and onions into pot.
- Brown, drain off excess fat.
- Add saved juice, tomato sauce, potatoes, tomatoes and all frozen vegetables to pot.
- Fill pot to top with water.
- Simmer for 3 to 4 hours on top of stove.
- Serve with rolls and butter.
