Okra Gumbo
- 1 (16 oz.) pkg. frozen, cut okra, cooked and drained
- 3 Tbsp. oleo
- 1 c. finely chopped green onions
- 1 medium chopped bell pepper
- 2 cloves garlic, chopped
- 1 (16 oz.) can stewed tomatoes
- 1 (16 oz.) can tomato sauce
- 1/8 tsp. pepper
- 2 c. cooked chicken, chopped
- 1 c. cooked ham, chopped
- 1 (10 3/4 oz.) can chicken broth
- 1/8 tsp. cayenne pepper
- 1/8 tsp. thyme
- 1/8 tsp. oregano
- 1/8 tsp. Tabasco
- 1 tsp. Worcestershire sauce
- 1/2 tsp. salt
- In a 4-quart pan, gently melt oleo.
- Add onions, bell pepper and garlic.
- Saute until softened.
- Add tomatoes, tomato sauce and chicken broth.
- Bring mixture to a boil.
- Reduce heat.
- Add seasonings, chicken, ham and okra.
- Simmer for 30 to 40 minutes. Serve over fluffy white rice.
