Potato Onion Supreme
- 8 medium potatoes (about 2 1/2 lb.)
- 2 large sweet onions, sliced
- 1/4 c. water
- 2 Tbsp. chicken bouillon granules
- 2 c. (8 oz.) shredded sharp Cheddar cheese
- 2 c. (16 oz.) sour cream
- 3/4 c. bread crumbs
- 2 Tbsp. melted butter
- paprika
- Cook potatoes, peel and slice 1/4 inch thick.
- Set aside. Place onions, water and bouillon in saucepan.
- Bring to boil. Simmer 5 to 7 minutes or until onions are tender.
- Drain and set aside.
- Combine cheese and sour cream.
- In a greased 2 1/2-quart baking dish, layer half the potatoes, onions and cheese mixture. Repeat with remaining ingredients.
- Combine crumbs and butter.
- Top potato mixture.
- Sprinkle with paprika.
- Bake, uncovered, at 350u0b0 for 20 minutes until heated through.
- Garnish with chopped fresh parsley and several onion rings.
- Yields 8 servings.
