Dad'S Chili
- 3 to 4 lb. ground chuck
- 2 onions, chopped
- 3 tsp. chili powder per lb. ground chuck
- 1/2 tsp. cayenne (add more for hotter chili)
- 1 small can tomato sauce
- 2 (16 oz.) cans hot chili beans
- cracker meal
- salt and pepper to taste
- Fry meat in skillet until done; drain well.
- Put meat, chili powder, cayenne, salt and pepper in large pot.
- Fill with water. Boil 3 to 4 hours, adding water when needed.
- Add onions.
- Cook until tender.
- Add tomato sauce; stir well.
- Spoon off grease that is floating on top.
- Add a little cracker meal for grease you cannot remove.
- This helps thicken chili.
- Add 2 more teaspoons chili powder.
- Add salt and pepper to taste.
- Add beans.
- The longer the meat and chili powder boil, the better the chili taste.
