Pineapple Jewel Squares

  1. Mix crumbs, 2 tablespoons sugar and the butter.
  2. Press into bottom of 8 x 8 x 2-inch dish; chill.
  3. Thoroughly drain pineapple, reserving 1/2 cup syrup.
  4. Dissolve gelatin in boiling water.
  5. Add pineapple syrup; cool.
  6. Blend cream cheese with 3 tablespoons sugar, the vanilla and orange peel. Stir 1/2 cup gelatin into drained pineapple; set aside.
  7. Gradually blend remaining gelatin into cream cheese mixture.
  8. Stir in sour cream. Pour into crust; chill.
  9. Chill until firm.
  10. Spoon pineapple mixture evenly over cream cheese layer.
  11. Chill 4 to 6 hours.
  12. Yields 6 to 9 servings.
