Old Fashioned Molasses Cookies
- 1 1/2 c. sugar
- 1 scant c. lard or other shortening
- 3/4 c. molasses
- 2 eggs
- 6 c. flour
- 1 tsp. ginger
- 1/2 tsp. salt
- 2 tsp. baking soda, dissolved in 2/3 c. hot coffee (instant coffee is fine)
- Cream together in a large bowl the sugar, lard or other shortening, molasses and eggs.
- Sift the flour, ginger and salt. Dissolve the baking soda in the coffee.
- Stir dry ingredients into molasses mixture, adding coffee alternately.
- Chill.
- Roll out dough to a thick layer, 1/2-inch or so.
- Cut with round cutter. Dip into sugar.
- Place on greased baking sheet, leaving room to spread.
- Bake at 375u0b0 for about 10 minutes but do not let brown as they will be too hard.
- They are a good big soft cookie which keep well. Cool on rack and enjoy with a glass of milk.
