Old Fashioned Molasses Cookies

  1. Cream together in a large bowl the sugar, lard or other shortening, molasses and eggs.
  2. Sift the flour, ginger and salt. Dissolve the baking soda in the coffee.
  3. Stir dry ingredients into molasses mixture, adding coffee alternately.
  4. Chill.
  5. Roll out dough to a thick layer, 1/2-inch or so.
  6. Cut with round cutter. Dip into sugar.
  7. Place on greased baking sheet, leaving room to spread.
  8. Bake at 375u0b0 for about 10 minutes but do not let brown as they will be too hard.
  9. They are a good big soft cookie which keep well. Cool on rack and enjoy with a glass of milk.
