Feathery Fudge Cake
- 2 c. all-purpose flour
- 1 1/4 tsp. baking soda
- 1/2 tsp. salt
- 2/3 c. butter or margarine
- 1 3/4 c. sugar
- 1 tsp. vanilla
- 2 eggs
- 3 sq. (3 oz.) unsweetened chocolate, melted and cooled
- 1 1/4 c. cold water
- Grease and lightly flour two 9 x 1 1/2-inch round baking pans. Combine the first 3 ingredients.
- In a mixer bowl, beat butter on medium speed of electric mixer, about 30 seconds.
- Add sugar and vanilla and beat until well combined.
- Add eggs, one at a time, beating 1 minute after each.
- Blend in cooled chocolate.
- Add dry ingredients and cold water alternately to beaten mixture, beating after each addition.
- Turn into pan.
- Bake in a 350u0b0
- oven for 30 to 35 minutes, or until done.
- Cool 10 minutes on wire racks. Remove from pans.
- Cool.
- Makes 12 servings.
