Cranberry Nut Bread
- 2 c. sifted flour
- 1/2 tsp. salt
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 eggs
- 1 c. sugar
- 2 Tbsp. vegetable shortening, melted into 1/4 c. boiling water
- 1/2 c. orange juice
- 1 c. cranberries, coarsely chopped
- 1 c. walnuts, chopped
- Mix flour, salt, baking powder and baking soda into medium bowl.
- Beat 2 eggs in large bowl until foamy.
- Add sugar slowly and beat until thick and light.
- Melt shortening in boiling water. Mix in orange juice.
- Stir dry ingredients into egg mixture alternately with orange juice mixture.
- Blend well after each addition.
- Stir in cranberries and nuts.
- Spoon into greased 9 x 5 x 3-inch loaf pan and bake in a preheated oven for 1 hour.
- Makes 1 loaf.
