Cranberry Nut Bread

  1. Mix flour, salt, baking powder and baking soda into medium bowl.
  2. Beat 2 eggs in large bowl until foamy.
  3. Add sugar slowly and beat until thick and light.
  4. Melt shortening in boiling water. Mix in orange juice.
  5. Stir dry ingredients into egg mixture alternately with orange juice mixture.
  6. Blend well after each addition.
  7. Stir in cranberries and nuts.
  8. Spoon into greased 9 x 5 x 3-inch loaf pan and bake in a preheated oven for 1 hour.
  9. Makes 1 loaf.
