Mild Chow Chow
- 3 qt. green tomatoes
- 6 large bell peppers
- 4 Tbsp. dry mustard
- 2 Tbsp. turmeric
- 3 qt. vinegar
- 4 1/2 c. sugar
- 2 Tbsp. ginger
- 1/4 c. cornstarch
- 1 gal. cabbage
- 12 large onions
- 2 1/2 Tbsp. pickling spice
- 3 Tbsp. mustard seed
- 1 large box raisins
- 1 Tbsp. cinnamon
- 2 qt. water
- Chop all vegetables.
- Mix with 3/4 cup salt.
- Let stand overnight; drain the mixed spices in bag.
- Add sugar, vinegar, spices, mustard seed and water.
- Simmer 20 minutes.
- Add remaining ingredients; bring to a boil, then simmer until just done.
- Remove spice bag.
- Add enough water to cornstarch so it is completely dissolved.
- Add to chow chow and stir well.
- Cut off heat and pack into boiled jars and seal at once.
