Eskimo Bread
- 4 c. flour
- 1 c. pancake mix
- 1 tsp. salt
- 1/4 c. dried egg or 1 egg
- 2 tsp. baking powder
- 1/4 c. Crisco oil
- 1 1/2 c. low-fat milk, slightly warmed
- approximately 1 c. brown sugar
- approximately 2 Tbsp. warm water
- Place flour, pancake mix, salt, egg, baking powder and oil in large mixing bowl.
- Add 1/2 of milk.
- Add brown sugar to remainder of milk until medium brown color.
- Add milk and sugar mixture to mixing bowl.
- Take approximately 2 tablespoons warm water and rinse out cup which held sugar and milk mixture.
- Add this water to bowl.
- Gradually stir flour into side of bowl that holds the liquid.
- Mix until all flour is mixed in.
- Batter will be thick and sticky.
- Heat skillet with hot Crisco oil.
- Drop dough into hot oil by large tablespoonfuls.
- Flatten dough out with spatula so it cooks thoroughly.
- Cook until brown on both sides.
- Remove from oil and drain on paper towels.
- Makes 2 to 2 1/2 dozen pieces of bread.
