Claudia'S Green Chili Enchiladas
- 8 to 12 tortillas
- 3 c. sharp Cheddar cheese
- 1 small onion (optional)
- 1 can Old El Paso green enchiladas sauce
- 1 small can chopped green chilies
- 2 cloves garlic (or 1 tsp. garlic powder)
- chili powder to taste
- 1 tsp. seasoned salt
- 1/2 tsp. Lantana seasoning
- 1 lb. lean ground beef
- Heat
- enchilada
- sauce, water (enough to rinse can) and juice from
- green chilies in a saucepan (big enough to hold a flat tortilla).teanwhile, fry meat and pour grease off.
- Add garlic, chili powder, salt and pepper to meat.
- Get remaining ingredients ready and grease large ovenware dish.
- Dip tortillas
- in 1/4-inch of hot oil.
- Fry quickly on both sides (don't let
- it get crisp). Put in sauce.
- Place on serving dish.
- In middle
- of
- tortilla, place
- meat,
- cheese,
- onion
- and green chilies.
- Roll
- the tortilla
- and
- place
- the
- end on bottom. Cover with remaining sauce, cheese and green chilies.
- Bake in 300u0b0 oven for 30 minutes or microwave.
