Chicken Ravioli
- 1 hen or 4 chicken breasts
- 1 large onion, chopped
- 1 green pepper, chopped
- 6 stalks celery, chopped
- 1 (12 oz.) pkg. wide noodles
- 1 (3 oz.) canned, sliced mushrooms
- 1 lb. grated Cheddar cheese
- 1 stick margarine
- 1 small jar pimento
- 1 can cream of mushroom soup
- salt and pepper to taste
- Preheat oven to 350u0b0.
- Cook chicken, skin and debone.
- Cut to bite-size pieces.
- Reserve stock after removing fat.
- Saute green peppers, onion and celery in margarine.
- Cook noodles in chicken stock.
- Mix together cheese (reserve a little cheese for topping), pimento, mushrooms, mushroom soup, 1 cup chicken stock, salt and pepper to taste.
- Add to noodles.
- Put in large pan and top with reserved cheese.
- Bake for 30 minutes or until hot and bubbly.
