Sweet And Sour Cabbage
- 2 1/2 to 3 c. red cabbage, shredded
- 2 Tbsp. shortening (bacon grease preferred)
- 1 medium onion, thinly sliced
- 3/4 c. red wine vinegar
- 4 Tbsp. sugar
- 1 Tbsp. salt
- freshly ground pepper to taste
- 6 whole cloves
- 2 bay leaves
- 6 juniper berries
- 2 to 3 Tbsp. flour
- 1 Tbsp. sweet butter
- juice 1/2 lemon
- 1 Tbsp. light molasses
- Heat bacon grease, fry onions until lightly brown.
- Add vinegar, sugar, salt, pepper, bay leaves, juniper berries and 2 cups water.
- Bring to boil.
- Add cabbage, simmer 45 minutes or until cabbage is tender.
- Remove and sprinkle with flour.
- Melt butter; add lemon juice and molasses.
- Stir mixture into cabbage. Serve very hot.
