Prune Loaves
- 2 c. water
- 1 c. snipped pitted dried prunes
- 1 c. sugar
- 1/4 c. shortening
- 1 egg
- 1 c. buttermilk
- 2 c. all-purpose flour
- 1 c. whole-wheat flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/4 tsp. baking powder
- In small saucepan, combine water and snipped prunes; bring to boil.
- Cover and simmer 3 minutes.
- Drain reserving 1/3 cup liquid. Set aside.
- Cream together sugar and shortening until fluffy; beat in egg.
- Combine buttermilk and reserved prune liquid.
- Stir together thoroughly all-purpose flour, whole wheat flour, baking soda, salt and baking powder.
- Add to creamed mixture alternating with buttermilk mixture.
- Fold in cooked prunes.
- Bake in two 7 1/2 x 3 1/2 x 2-inch loaf pans (greased).
- Bake at 350u0b0 about 1 hour. Cool 10 minutes in pans; remove to wire racks.
