Prune Loaves

  1. In small saucepan, combine water and snipped prunes; bring to boil.
  2. Cover and simmer 3 minutes.
  3. Drain reserving 1/3 cup liquid. Set aside.
  4. Cream together sugar and shortening until fluffy; beat in egg.
  5. Combine buttermilk and reserved prune liquid.
  6. Stir together thoroughly all-purpose flour, whole wheat flour, baking soda, salt and baking powder.
  7. Add to creamed mixture alternating with buttermilk mixture.
  8. Fold in cooked prunes.
  9. Bake in two 7 1/2 x 3 1/2 x 2-inch loaf pans (greased).
  10. Bake at 350u0b0 about 1 hour. Cool 10 minutes in pans; remove to wire racks.
