Kith 'N Kin Cake
- 3/4 c. butter or margarine, softened
- 1 1/2 c. sugar
- 3 eggs
- 1 tsp. vanilla extract
- 2 c. sifted all-purpose flour
- 1/2 c. cocoa
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. oats (quick or old-fashioned), uncooked
- 2/3 c. canned sauerkraut, drained and chopped
- Beat butter until creamy.
- Gradually add sugar, beating well after each addition.
- Blend in eggs and vanilla.
- Sift together flour, cocoa, baking powder and salt.
- Alternately add flour mixture with oats and water to butter mixture.
- Mix well.
- Fold in sauerkraut.
- Grease bottoms of two 8-inch round baking pans lined with waxed paper.
- Grease again and flour.
- Pour batter into prepared pans.
- Bake in preheated oven at 350u0b0 for 25 to 30 minutes.
- Remove from pans.
- Cool on racks.
