Micro-Easy Sweet N Sour Chicken
- 1 (6 oz.) pkg. frozen pea pods
- 2 Tbsp. water
- 1 small onion, thinly sliced
- 1/4 c. chopped green pepper
- 1 large stalk celery, sliced diagonally
- 2 c. cooked, cubed chicken
- 1 (15 oz.) can pineapple chunks (in own juice; juice reserved)
- 4 tsp. cornstarch
- 1 tsp. instant chicken bouillon granules
- dash of ground ginger
- 1 tsp. brown sugar
- 1 1/2 Tbsp. soy sauce
- 1 Tbsp. vinegar
- Place pods and water in 2-quart covered casserole.
- Microwave on High 2 to 3 minutes or until defrosted.
- Break apart and drain. Stir in the next 5 ingredients and set aside. In a 4-cup measure, combine cornstarch, bouillon, ginger and brown sugar. Stir in soy sauce, vinegar and reserved pineapple juice.
- Microwave on High 2 to 3 1/2 minutes or until sauce is clear and thickened, stirring every minute.
- Fold sauce into chicken mixture. Cover.
- Microwave on High 4 to 6 minutes or until heated through.
- Serve over rice. Makes 4 servings.
