Shepherd'S Pie(One Of My Husband'S Favorites.)
- 1 1/2 lb. ground beef or ground lamb
- 2 Tbsp. butter
- 1 c. finely chopped onions
- 1/2 c. coarsely chopped celery
- 1/2 c. coarsely chopped carrots
- 1/4 c. freshly chopped parsley
- 3 Tbsp. flour
- 2 Tbsp. tomato paste
- 1/2 c. dry red wine
- 1 1/2 to 2 c. beef broth
- 1 1/2 tsp. Worcestershire sauce
- 1 c. frozen corn kernels
- 3 or more c. mashed potatoes
- Preheat oven to 350u0b0.
- Heat the butter in a saucepan and add onions, carrots and celery.
- Cook, stirring until onions are wilted.
- Add the 3 tablespoons of flour and stir with wire whisk. Add tomato paste, wine, beef broth and Worcestershire sauce.
- Stir rapidly for two minutes and let simmer slowly for 10 minutes.
- Set aside.
