Red Cabbage Salad With Poppy Seed Dressing
- 1 head red cabbage
- 3 green onions, thinly sliced
- 1 small carrot, peeled and grated (I added this to pump in more color)
- 2 -3 slices bacon, crisply cooked, crumbled
- cracked black pepper, to taste
- Poppy Seed Dressing
- 1 tablespoon Dijon mustard
- 2 tablespoons poppy seeds
- 1/4 cup unbleached white sugar (reduced from 1/2 cup)
- 1/4 cup safflower oil (reduced from 1/2 cup)
- 1/2 cup apple cider vinegar
- 1/2 teaspoon salt
- Whisk poppy seed dressing ingredients together in a glass bowl.
- In large salad bowl, combine salad ingredients with the dressing and mix well.
- Cover and chill at least 3 hours.
- Before serving, season with fresh cracked black pepper.
- Servings are estimated.
