Texas Tortilla Soup
- 1/2 stick butter
- 1/2 c. oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 large carrots, diced
- 6 ribs celery, diced
- 1 lb. chicken, cooked and shredded
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1 tsp. salt
- 1 tsp. lemon pepper
- 3 dashes Tabasco sauce
- 1/2 c. flour
- 14 oz. can tomatoes
- 4 (10 1/2 oz.) cans chicken broth
- tortilla chips
- grated cheese
- low-fat yogurt
- Heat butter and oil in large kettle.
- Saute onion, garlic, carrots and celery.
- Simmer 15 minutes.
- Add cumin, chili powder, salt, lemon pepper, Tabasco sauce and flour.
- Add tomatoes and chicken broth.
- Simmer 1 hour.
- Add cooked chicken and heat thoroughly.
