Best Crab-Cakes Sandwiches

  1. Combine first 11 ingredients.
  2. Spread 2 cups fresh breadcrumbs on wax paper.
  3. Divide crab mixture into 8 patties, coat with breadcrumbs and refrigerate for 2 hours.
  4. Heat oven to 400 degrees.
  5. Roast red pepper for 30 minutes until charred.
  6. Wrap in foil and cool.
  7. Remove skin and seeds and chop fine.
  8. Combine with mayonnaise, lemon juice and garlic.
  9. Spread on cut sides of hamburger buns.
  10. Heat 1/4 inch oil in skillet.
  11. Cook crab cakes until golden, turning once about 8 minutes.
  12. Place crab cakes in rolls.
  13. Top each with 2 tbsp shredded lettuce, 1 slice tomato and sliced red onion.
