Creole Rice
- 1 c. long grain rice
- 3/4 c. onion, diced
- 1 c. water
- 2 tsp. vegetable oil
- 2 ribs celery, peeled and diced
- 2 tsp. fresh lemon juice
- 1/2 tsp. hot red pepper sauce
- black pepper to taste
- 2/3 c. red pepper, stemmed, seeded, de-ribbed and diced
- 2 c. canned Italian plum tomatoes with juice, chopped
- 3 cloves garlic, smashed, peeled and sliced
- Place red pepper, onion, celery, garlic and vegetable oil in a 13 x 9 x 2-inch oblong pan and stir to combine.
- Cook, uncovered, on High in microwave for 4 minutes.
- Remove from oven; stir in rice, tomatoes and juice, hot pepper sauce and water.
- Cook, uncovered, for 25 minutes, stirring 3 times, on High in microwave. Remove from oven.
- Stir in lemon juice and black pepper to taste. Serve hot.
- Serves 8.
