Creole Rice

  1. Place red pepper, onion, celery, garlic and vegetable oil in a 13 x 9 x 2-inch oblong pan and stir to combine.
  2. Cook, uncovered, on High in microwave for 4 minutes.
  3. Remove from oven; stir in rice, tomatoes and juice, hot pepper sauce and water.
  4. Cook, uncovered, for 25 minutes, stirring 3 times, on High in microwave. Remove from oven.
  5. Stir in lemon juice and black pepper to taste. Serve hot.
  6. Serves 8.
