Turkey Sausage And Lemon Pasta
- 1 (12 ounce) package sliced turkey sausage, hardwood smoked
- 8 ounces uncooked pasta (I used mini rotelle wheels)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 cup canned diced tomato, drained
- 1 cup frozen green pea, thawed and drained
- 1/4 cup fresh lemon juice
- 1 teaspoon dried Italian seasoning
- 1/2 cup shredded parmesan cheese
- Cook pasta, drain and set aside.
- Heat oil in large skillet over medium heat, and add sliced sausage. Cook, stirring frequently, for 4 minutes or until lightly browned.
- Add garlic and cook, stirring consistently for 1 minute.
- Stir in tomatoes, herbs, peas and lemon juice, and cook for 2 minutes.
- Add pasta and toss.
- Top with shredded cheese and serve.
